If you’re looking for an explanation as to what a courgette is, you’re in luck there, as well. Really, “courgette” is just another word for “zucchini.” If you’re an American, that’s what they call zucchini across the pond. However, since that seemed to confuse some people, foodies across the nation began using the words to represent different sizes of zucchini. Courgettes are smaller, younger zucchini, whereas zucchini are older and larger. Both are actually a version of the marrow, which is what some foodies call a fully developed zucchini. I know; it all sounds so confusing, so for this article, let’s just go with the “courgettes are zucchini” argument and leave it at that. Whatever you want to call them, these courgette recipes are delish! So let’s get to it.
How To Cook With Courgettes
1. Courgette Pasta
You can make this flavorful, creamy pasta in only 20 minutes with fewer than 10 ingredients. In essence, the pasta is a lot like buttered noodles, but it includes garlic, grated courgettes, and parmesan cheese. You mostly taste the cheese and garlic in the recipe, but there’s a bright burst of lemon zest every now and again, as well.
2. Zucchini Fritters
In keeping with the theme, we really should call these courgette fritters, but as we’ve established, the two are the same thing. Plus, who cares what it’s called as long as it tastes good?! Chances are that you’ve probably enjoyed fritters at some point, whether they were potato fritters, corn fritters, or something else. If not, you’re in for a real treat. They’re crispy, savory, and herby, with the perfect amount of salt and crunch. They’re also super easy to make, which is great if you’re a beginner cook.
3. Summer Courgette Salad
This salad tastes better in the summer when your courgettes are fresh from the garden and in season. However, you can enjoy it anytime, as long as you have the right stuff. It’s less like a traditional salad and more like something you would order at a Chinese restaurant – thick, chunky, and absolutely covered in sauce. All you’ll need are courgettes, garlic cloves, parsley, and everything you need to make the dressing/sauce – cider vinegar, balsamic vinegar, olive oil, and salt. I also add thick slices of onions to mine because otherwise, I feel like I’m just not getting enough substance, but that’s entirely up to you.

If you’re looking for a relatively simple soup that you can pull together with minimal ingredients and have ready for the stove in 10 minutes, courgette soup is the soup for you. It’s rich and creamy, thanks to the butter and cream, and the chicken stock, courgettes, garlic, and onions give it a pleasant, earthy taste that’s hard not to enjoy. It’s packed full of vitamins and minerals and is high in fiber, which is always a good thing.
5. Courgette Puff Pastry Tart
This tart is one of the easiest you’ll ever make, and it tastes phenomenal. The warm, flaky crust is delightful, and the cream cheese, herbs, and courgettes give it a marvelous taste. Tarts are easy to love anyway, but if you’re looking for one that’s nutritious, delicious, and effortless to prepare, this is the one you want.
6. Courgette Pizza Bites
It’s hard to enjoy pizza on a low-carb or ketogenic diet. That is unless, of course, you make mini-pizzas with courgette crusts. Then it’s as simple as A, B, C. You’ll want to start with a jumbo courgette (or marrow, if you prefer), as the smaller pieces won’t be large enough to hold all the goodies. Once you’ve sliced them, drizzle them with oil and cook them for a couple of minutes. Then pile them high with your pizza toppings – tomatoes, cheese, spices, etc. They don’t taste precisely like the real thing, but they’re pretty darned close.
7. Carrot Courgette Muffins
Sweet muffins are delightful, but sometimes, you’re just in the mood for something savory instead. These tasty muffins are soft and fluffy, but they have nice crispy edges. They’re full of all kinds of good stuff, too, like milk, cheese, courgettes, and carrots. They remind me a bit of a quiche, only with less cheese and more veggies.
8. Courgette Risotto
Courgette risotto may not look like the most appetizing recipe on this list of courgette recipes, but this is one of those cases where it tastes much better than it looks. If you enjoy creamy, cheesy risotto and lots of veggies, then you’ll really love this particular dish. It’s best in the summer when all your veggies are fresh, but you can make it anytime. The cheesy risotto tastes like cheesy risotto always tastes – exceptional. The onions, garlic, courgettes, peas, thyme, and pepper add plenty of garden-fresh, herby flavor. The pine nuts bring a bit of crunch to the mix, and the other ingredients – white wine, olive oil, vegetable stock, butter, and lemon zest – combine to create a flavorful, rich sauce base. Despite all the ingredients, it takes only 5 minutes to prepare and another 30-35 to cook. It’s pretty much a meal in and of itself, but feel free to serve it with lean protein or thick bread if you prefer.
9. Garlic Parmesan Zucchini Casserole
This three-cheese casserole requires fewer than ten ingredients and is the perfect side dish for practically any meal. It’s exceptionally cheesy, and the breadcrumbs on top give it a wonderfully crunchy texture. Mostly, the taste comes from the garlic, Parmesan, mozzarella, and cheddar. However, the zucchini and the onions add flavor and extra crunch that puts the meal over the top.
10. Courgette Cake
Courgette cake may not sound like something you’d be into, but think of zucchini bread and carrot cake. Those are two very delicious sweet treats, and this is kind of like a combination of both. It takes a little time to make, but it’s so good. It’s dense and spicy like zucchini bread, but it has the same sweet and zesty cream cheese icing as carrot cake.
