We all love a good burger and this Grilled Chicken Burger does not disappoint! Call me crazy but I actually prefer chicken burgers to beef burgers. I like that they are a little healthier and lighter, and this Grilled Chicken Burger is packed with flavour. I make these burgers almost every week, usually using whole30 mayo with a side of crispy baked potato wedges. If you’re an Aussie, this burger is my copycat version of the Grill’d Sweet Chilli Chicken Burger, minus the tomato relish. I hate tomato relish. I was going almost every week to get one of these Sweet Chilli Chicken burgers at $15 a pop when I realised I could probably just try to recreate it at home for half the cost. The result? Well you can be the judge but I think I’ve made an even better burger! The lightly seasoned juicy grilled chicken breasts are perfection nestled between a soft burger bun and filled with all the best fix-ins - lettuce, tomato, carrot and beetroot. Top it all off with sweet chilli mayonnaise and dig in.

It’s hard to call a burger “healthy”. Burgers by nature are an indulgence food but when they are made well with good ingredients and loaded with salad it has every right to be part of a balanced diet. This grilled chicken burger is approximately 612 calories, and is healthier than it’s beef or crumbed / breaded chicken counterpart.

How do you slice chicken breast for burgers?
First, remove the tenderloin from the breast (you’ll still use the tenderloin for the burgers), then place the chicken breast on a cutting board and hold it flat with the palm of your hand. Using a sharp knife, slice the chicken breast horizontally into two even pieces.
Next, place the tenderloin and chicken breast pieces between two sheets of plastic wrap, and use a meat mallet or the bottom of a mug to gently pound the chicken to uniform sizes. If you’re using mallet, use the flat side. This step helps ensure the chicken cooks evenly.
The chicken is now ready to be cooked!
