Without much special equipment, Instant Pot egg bites are an easy way to meal prep your healthy breakfast quickly. Plus, just like many egg recipes, this one is easy to customize with your favorite flavors. My family has had a weekly tradition of getting Starbucks egg bites ever since my kids started swim class on Sundays a couple years ago. But, making them at home offers a quick healthy breakfast on the go.

Starbucks egg bites combine eggs, cheese, and meat or veggies into a protein-packed breakfast on the go. They are available in a variety of flavors, including bacon gruyere and roasted red pepper. The original recipe for egg bites cooks using sous vide, a method that involves cooking a sealed pouch of food in a water bath, at low temperature for an extended period of time. But since it requires special equipment, I opted to make these in my Instant Pot instead! (If you don’t have an Instant Pot, you can make sausage egg muffins or any flavor egg muffins in a muffin tin instead.)

Whole Eggs – Let them come to room temperature before cooking for fluffier results.Gruyere Cheese – The same used in the Starbucks version! You could swap it for mozzarella, cheddar, Monterey jack cheese, or pepper jack.Heavy Cream – Helps eggs get fluffy. Depending on your dietary needs, feel free to replace this with regular milk, half and half, coconut milk, or almond milk. (I also add water to thin out the heavy cream, but you can omit this if using a different type of milk instead.)Sea Salt & Black Pepper – For basic seasoning.Bacon – This recipe for Starbucks egg bites uses cooked bacon. If you don’t want to cook it on the stove top, cook bacon in the oven, air fryer bacon, or even bacon in the microwave. Or, you could replace the bacon with cooked sausage or diced ham instead.

Flavor Variations
My favorite flavor for egg bite recipes is bacon gruyere, so that’s what I made! But you can easily customize these copycat Starbucks egg bites to your liking. Here are some ideas for add-ins:
Vegetables – Try adding veggies like broccoli, mushrooms, cauliflower, bell peppers, or other low carb vegetables (or any kind). You’ll need to cook them first. The easiest way would be to cook them under high pressure right in the Instant Pot for just 1 minute (so fast!). Chop up what you need for the bites and save the rest for another use. You’ll want to stir the veggies into the egg mixture after blending (or just place them into the molds before adding the egg mixture), but avoid actually blending them.Sausage & Cheddar – Instead of using bacon and gruyere, you can use cooked sausage and cheddar cheese. Just swap the ingredients and follow the steps above.Egg White & Roasted Red Pepper – Use 7 egg whites instead of the whole eggs in the original recipe. Replace gruyere with 1/2 cup cottage cheese and 1/4 cup cream cheese. Replace bacon with 1/4 cup spinach, 2 tbsp roasted red pepper (drained and chopped), 1/8 tsp sea salt, 1/8 tsp black pepper, and 2 green onions.
Spinach & Feta Egg Bites – Replace bacon and gruyere with baby spinach and feta cheese.
